Vegan Arugula Salad Recipe

Ingredients:

  • ½ cup pecans, raw
  • 3.5oz/100g arugula
  • 10 cherry tomatoes, halved
  • ¼ cup fresh parsley, chopped
  • 1 medium avocado, diced
  • Olive oil and vinegar for the dressing
  • ¼ cup red onion, thinly sliced

How to prepare:

  1. Place pecans on a rimmed baking sheet and preheat the oven to 350°F/180°C.
  2. Bake pecans till fragrant and golden brown, for 8–10 minutes. After oven removal, set them away.
  3. While the pecans toast, mix the salad ingredients in a large bowl.
  4. Pecans and dressing go on the salad.
  5. Use olive oil and vinegar dressings that have zero net carbs.
  6. Mix and serve immediately. Serves two as an entrée and four as a side.
