Ingredients:

  • 1 tbsp olive oil
  • 2 medium onions
  • 3.5oz/100g celery
  • 1 cup green beans 
  • 1 cup tomato paste
  • 3 garlic cloves
  • Italian seasoning, salt, and black pepper to taste
  • Vegetable broth
  • 2 medium tomatoes
  • Bay leaves

How to prepare:

  1. Heat the oil in your instant pot, then sauté the onion until softened.
  2. Stir in the tomato paste, garlic, and seasonings. Simmer for 1 minute on the stove after bubbles come up.
  3. Then mix in the broth, celery, tomatoes, green beans, and bay leaf.
  4. Cover it and cook for 2 minutes on manual or pressure cooking. When the cooking time is finished, let it naturally release for 8–10 minutes before opening the valve and removing the lid.
  5. Stir in the spinach before serving.
