These easy, crispy zucchini cauliflower fritters are a meatless veggie burger alternative.
Ingredients:
- 1 large cauliflower, cut in florets
- 1 garlic clove, minced
- 1 medium zucchini, grated
- 1 cup vegan cheese, finely grated
- ¼ cup almond flour
- 2 tbsp vegan sour cream
- 1 tsp olive oil
- 1 tsp onion flakes
- Salt and pepper, to taste

How to prepare:
- Crush cauliflower florets in a food processor.
- Squeeze as much moisture out of grated zucchini as possible.
- Mix the cauliflower, almond flour, garlic, onion flakes, grated zucchini, and vegan cheese.
- Stir the cauliflower mixture, and add salt and ground black pepper.
- Heat olive oil in a frying pan over medium heat.
- Use a tablespoon to scoop the batter and place six fritters, or more, in your frying pan. Flatten the fritters with a spoon.
- Cook the fritters for 5 minutes on each side until they are crispy and golden brown, then transfer to a plate and cover with foil while you cook the next batch.
- Serve fritters on a plate with sour cream.
