Tofu can be a delicious addition to your vegan salads, and this dish is the perfect solution if you want a light dinner.
Ingredients:
- 1 cup mixed salad leaves
- 1 medium bell pepper
- ¾ cup tofu, chopped
- 1½ tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 2 tsp sesame seeds
- ½ tsp fresh ginger root, grated
- Ground black pepper, to taste

How to prepare:
- Mix tofu with 1 tbsp of soy sauce and olive oil to marinate it. Put the tofu in the fridge for at least 20 minutes, or up to 4 hours, before cooking.
- Preheat the oven to 400ºF/200°C. Line a baking sheet with baking paper.
- Place the tofu on the baking sheet and bake for about 15–20 minutes until golden and firm.
- Meanwhile, in a small bowl, mix freshly grated ginger, the remaining soy sauce, sesame oil, ground black pepper, and sesame seeds to prepare the dressing.
- On a serving plate, add mixed salad leaves, finely chopped pepper, and tofu. Drizzle with the dressing, and mix to combine. Enjoy!
