Ingredients:
- 2 medium eggs
- 1 small tomato, chopped
- 2 tsp olive oil
- ½ cup arugula leaves
- 2 pinches salt
- 2 pinches ground black pepper
- 2 tbsp heavy cream, 36% fat
- 1 slice low-carb bread
- 2 tbsp grated cheddar cheese

Instructions:
- Whisk the eggs with heavy cream, a pinch of salt, and a pinch of ground black pepper in a bowl.
- Heat the pan with half the olive oil over medium heat. Pour the egg mixture and let it sit for a few minutes. Lower the heat and continue to cook until the egg mixture cooks through.
- Top the omelet with cheddar cheese. Let it sit for 1 minute or until the cheese melts, and slide it onto a serving plate.
- Arrange the salad: add arugula and chopped tomato on the side. Drizzle the remaining olive oil over the vegetables and sprinkle with salt and ground black pepper. Serve with low-carb bread, and enjoy!
