Ingredients:
- 2 medium eggs
- 1 tbsp olive oil
- 1 handful arugula leaves
- 2 pinches salt
- 2 pinches ground black pepper
- 4 small cherry tomatoes, quarters
- 2 tbsp heavy cream, 36% fat
- 2 slices low-carb bread
- 3 tbsp grated cheddar cheese

Instructions:
- Whisk the eggs with heavy cream, a pinch of salt, and a pinch of ground black pepper in a bowl.
- Heat a frying pan with olive oil over medium heat. Pour the egg mixture into the pan and cook, frequently stirring, until the eggs are cooked but remain soft and silky.
- Toast the bread. Divide grated cheddar cheese between bread slices. Then, add it to the microwave and heat for 20–30 seconds or until the cheese melts.
- Top each bread slice with scrambled egg, cherry tomatoes, and arugula. Sprinkle with salt and ground black pepper. Serve on a plate, and enjoy!
