Make kale mouth-watering by frying it with garlic and red chili peppers.
Served as a base for perfectly fried eggs, it is a spicy, low-carb breakfast that includes healthy greens, protein and fat.
Ingredients:
- 3 medium eggs
- 1 cup kale, chopped
- 1 tsp red chili pepper, chopped
- 2 tbsp olive oil
- 2 pinches salt and pepper
- 1 clove garlic, minced

Instructions:
- Season kale with a pinch of salt and ground black pepper.
- Heat a frying pan with olive oil over medium-high heat.
- In the frying pan, add kale, red chili pepper, and garlic. Cook for 5–8 minutes tossing occasionally until kale is slightly wilted but still crisp.
- In the same frying pan, crack the eggs and season with a pinch of salt and ground black pepper. Cover the pan with a lid and cook for another 2–4 minutes until the egg whites are set.
- On a serving plate, serve eggs with kale, and enjoy!
NOTE: Feel free to use frozen kale.
