Fried Eggs with Avocado and Asparagus Recipe

Seasoned with salt, pepper, and a drizzle of zesty lemon juice will have you asking for more.

Ingredients: 

  • 2 medium eggs
  • 1 small avocado 
  • 2 tsp olive oil 
  • 2 handfuls arugula leaves 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1 pinch basil, dried 
  • ½ cup asparagus, chopped 
  • 1 tsp sesame seeds
  • 2 tsp lemon juice 
  • ½ medium cucumber, sliced

Instructions: 

  1. Heat half of the olive oil in a frying pan over medium-high heat. Crack the eggs and fry until desired doneness. Season with a pinch of salt and ground black pepper. 
  2. In the meantime, heat the remaining olive oil in a separate frying pan. Add chopped asparagus and stir fry for about 3–4 min. 
  3. Serve fried eggs on a plate with asparagus, sliced avocado, arugula, and sliced cucumber on the side. Sprinkle sesame seeds, a pinch of salt, ground black pepper, and dried basil, drizzle lemon juice over the vegetables. Enjoy!
