Keto Chicken Salad With Bacon Recipe

Ingredients:

For the marinade/dressing:

  • ½ tbsp Dijon mustard
  • ½ tbsp olive oil
  • ¼ tbsp white vinegar
  • 2 tbsp liquid stevia
  • 1 garlic clove, minced
  • Salt, to taste
  • Pepper, to taste

For the salad:

  • 1 cup lettuce, chopped
  • ¼ cup cherry tomatoes, sliced
  • ¼ large avocado, sliced
  • ¼ red onion, sliced
  • 1 cucumber, sliced
  • 4 strips bacon, diced
  • 1 chicken breast, boneless

How to prepare:

  1. In a bowl, mix all the marinade ingredients.
  2. In another bowl, pour half of the marinade mix and put the chicken breast inside it. Cover and rest for at least 10–15 minutes.
  3. Add oil to a hot pan and sear both sides of the chicken for 5 minutes. Once done, allow to cool and slice into strips.
  4. Fry the bacon in the same pan until crispy.
  5. Add all the salad ingredients to a bowl, including the cooked bacon and chicken. Toss well.
