Place the almond flour in a second shallow dish, and mix the grated parmesan and ground pork rinds in a third shallow dish.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Dust with almond flour.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Season the chicken thighs with salt and pepper and dip each piece in the almond flour. Make sure the chicken is evenly coated in a light layer of flour.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Dip the floured chicken into the beaten egg, and then cover it in the pork rind and parmesan cheese to form an even coating.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Heat the oil in a large skillet over medium-high heat. Test the temperature by dropping a small piece of the coating mixture into the oil. If it sizzles, your oil is ready for cooking.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cook the chicken pieces in batches until golden brown on both sides and place on a plate lined with a paper towel.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Make the tomato sauce in the same skillet: Heat the olive oil and fry the onion and garlic until the onion is soft.
