Set aside.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a bowl, mix together the lemon juice, half of the olive oil, minced garlic, chili powder (optional), cumin, smoked paprika, salt, and ground black pepper. Add shrimp and stir well.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Heat a frying pan over medium heat. Add shrimp with olive oil sauce to the pan and cook for 1\u20132 minutes on each side or until cooked through, then remove and set aside.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In the same pan, add the remaining olive oil and cauliflower rice and cook for 3\u20135 minutes until warmed through. Mix in chopped cherry tomatoes.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Serve the cauliflower rice with tomatoes in a bowl and top with fried shrimp and chopped cilantro.
